Jam-Filled Doughnut

These muffins are a delightful hybrid of doughnuts and muffins, featuring a jam-filled centre that can be customised with your choice of fruit jam.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1 cup milk
  • 6 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1/2 cup Wonderfrutz Mixed Fruit Jam

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
  3. In another bowl, whisk the eggs, milk, butter, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Fill each muffin cup halfway with batter. Add a teaspoon of jam to the centre of each, then cover with more batter until the cups are about three-quarters full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the muffin (but not into the jam) comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
